Description
This Hobo Casserole is a comforting and budget-friendly dish featuring layers of tender potatoes, savory ground beef, and creamy mushroom soup, all topped with melted cheddar cheese. It’s perfect for busy weeknights or a cozy family dinner.
Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 medium potatoes, thinly sliced
- 1 (10.5 oz) can condensed cream of mushroom soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese (or your preferred cheese)
- Salt and pepper, to taste
Instructions
1️⃣ Cook the beef and onion: In a skillet or pot over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is tender. Drain any excess grease.
2️⃣ Add potatoes and sauce: Stir in the thinly sliced potatoes, cream of mushroom soup, and milk. Season with salt and pepper. Mix well.
3️⃣ Simmer: Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 10-15 minutes, or until the potatoes are partially tender.
4️⃣ Preheat the oven: While the mixture is simmering, preheat your oven to 350°F (175°C).
5️⃣ Assemble the casserole: Pour the beef and potato mixture into a greased casserole dish. Sprinkle shredded cheese evenly over the top.
6️⃣ Bake: Place the casserole in the oven and bake for 20-25 minutes, or until the cheese is melted, golden, and bubbly.
7️⃣ Serve: Allow it to cool for a few minutes before serving. Enjoy your delicious, hearty hobo casserole!
Notes
- Potato slices: For faster cooking, slice the potatoes as thinly as possible. If you have a mandoline, it’s perfect for this!
- Make it your own: Feel free to add extra veggies like mushrooms, bell peppers, or green beans to customize the casserole.
- Cheese options: Try using different cheeses like Monterey Jack, mozzarella, or a mix of cheeses for a unique twist.
