This hearty and flavorful goulash combines tender ground beef, aromatic spices, and perfectly cooked elbow macaroni in a rich tomato-based sauce. Perfect for a comforting weeknight meal that’s quick and easy to make!
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup chopped tomatoes (canned or fresh)
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 cup elbow macaroni
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
1️⃣ Sauté the Vegetables:
In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat.
Add the chopped onion, bell pepper, and minced garlic. Sauté for about 5 minutes, stirring occasionally, until the vegetables are softened and fragrant.
2️⃣ Brown the Beef:
Add the ground beef to the pot, breaking it up with a wooden spoon.
Cook for 7–10 minutes, or until the beef is browned and fully cooked. Drain excess fat if needed.
3️⃣ Add the Spices and Tomatoes:
Stir in the paprika, ground cumin, dried oregano, salt, and pepper. Mix well to coat the beef and vegetables with the spices.
Add the chopped tomatoes and tomato paste, stirring until well combined.
4️⃣ Add the Broth and Macaroni:
Pour in the beef broth and bring the mixture to a boil.
Stir in the elbow macaroni, ensuring it’s fully submerged. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the pasta is tender and cooked al dente.
5️⃣ Adjust and Serve:
Taste and adjust seasoning with additional salt and pepper, if necessary.
Serve the goulash hot, garnished with fresh parsley if desired.
