Ingredients
For the chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- Olive oil
For the filling:
- 1 cup broccoli florets, steamed and finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
Instructions
1️⃣ Preheat the oven:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil and set aside.
2️⃣ Prepare the chicken:
Place each chicken breast between two sheets of plastic wrap or parchment paper. Gently pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin. Season both sides with salt and pepper.
3️⃣ Make the filling:
In a mixing bowl, combine the finely chopped steamed broccoli, shredded cheddar cheese, softened cream cheese, minced garlic, dried thyme, paprika, and optional red pepper flakes. Mix until well blended.
4️⃣ Stuff the chicken:
Spoon the broccoli-cheese mixture evenly onto one side of each chicken breast. Carefully roll up the chicken, enclosing the filling. Use cooking twine or toothpicks to secure the seams and prevent the filling from spilling out.
5️⃣ Arrange and season:
Place the stuffed chicken breasts in the prepared baking dish, seam side down. Drizzle the tops with olive oil and season with a little extra salt and pepper if desired.
6️⃣ Bake:
Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (75°C).
7️⃣ Rest and serve:
Remove from the oven and let the chicken rest for 5 minutes. Slice and serve hot. Garnish with fresh herbs, if desired, for an added touch.
