Ingredients
- 2 large onions
- 1 cup shredded mozzarella cheese
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil for frying
Instructions
1️⃣ Prepare the Onions and Cheese Filling:
Slice the onions into thick rings, about 1/2 inch wide, and separate each ring. Take two rings (one smaller and one slightly larger) and fill the space between them with shredded mozzarella cheese, pressing gently to compact the cheese.
2️⃣ Coat the Onion Rings:
- Dredge each stuffed onion ring in flour, making sure to coat all sides evenly.
- Dip the floured rings in the beaten eggs, letting any excess drip off.
- Finally, coat each ring thoroughly with breadcrumbs, pressing down lightly to help the crumbs stick.
3️⃣ Fry the Onion Rings:
Heat oil in a deep fryer or large skillet to about 350°F (175°C). Carefully add a few onion rings at a time to the hot oil, making sure not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and crispy.
4️⃣ Drain and Serve:
Remove the onion rings with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve hot and enjoy!
