Description

A creamy, cheesy, and comforting casserole that’s perfect for dinner! Using turkey bacon keeps it a bit lighter while still delivering that smoky, savory flavor.

  • For the casserole:
    • 2 cups cooked chicken, shredded
    • 8 slices turkey bacon, cooked and crumbled
    • 1 package (16 oz) macaroni pasta
    • 1 tbsp olive oil
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 3 cups heavy cream
    • 1 packet ranch dressing mix
    • 1 cup shredded mozzarella cheese
    • 1 cup shredded cheddar cheese
    • Salt and pepper to taste
  • For garnish:
    • 2 tbsp fresh parsley, chopped

Instructions

1️⃣ Preheat the oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.

2️⃣ Cook the pasta: Prepare the macaroni pasta according to package instructions until al dente. Drain and set aside.

3️⃣ Sauté the aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 2-3 minutes.

4️⃣ Make the sauce: Stir in the heavy cream and ranch dressing mix. Bring the mixture to a simmer and cook for about 5 minutes, or until slightly thickened.

5️⃣ Combine the casserole mixture: In a large mixing bowl, combine the cooked pasta, shredded chicken, crumbled turkey bacon, the sauce from the skillet, and half of the shredded mozzarella and cheddar cheeses. Season with salt and pepper to taste.

6️⃣ Assemble the casserole: Pour the mixture into the prepared baking dish. Spread it out evenly, then sprinkle the remaining mozzarella and cheddar cheeses over the top.

7️⃣ Bake: Place the casserole in the oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and golden brown.

8️⃣ Garnish and serve: Remove the casserole from the oven and let it rest for a few minutes. Sprinkle with chopped fresh parsley before serving.

Notes

  • Make it ahead: Assemble the casserole up to a day in advance and refrigerate. Bake as directed, adding 5-10 minutes to the cooking time if cold.
