Description

This unique twist on classic chicken cordon bleu combines all the rich, savory flavors of the beloved dish in an easy-to-make meatloaf. Layered with ham and Swiss cheese, and finished with a creamy Dijon gravy, it’s a show-stopping meal perfect for any occasion.


Ingredients

  • For the Meatloaf:

    • Ground Chicken: 2 lbs (lean)
    • Egg: 1 large
    • Bread Crumbs: 1/4 cup plain + 3/4 cup panko (for topping)
    • Onion: 2 tsp minced
    • Garlic Powder: 1 1/2 tsp
    • Dried Parsley: 1/2 tsp
    • Salt: 1 1/2 tsp (to taste)
    • Ground Black Pepper: 1/2 tsp
    • Mayonnaise: 1/4 cup (for moisture)
    • Virginia Chicken Ham: 6 slices
    • Swiss Cheese: 6 slices

    For the Creamy Dijon Gravy:

    • Butter: 3 tbsp
    • Flour: 3 tbsp
    • Heavy Cream: 1/4 cup
    • Milk: 1 cup (skim or 1%)
    • Dijon Mustard: 1 tbsp
    • Parmesan Cheese: 1/2 cup (grated)
    • Nutmeg: 1/4 tsp (freshly grated)
    • Salt and Pepper: To taste
    • Worcestershire Sauce: 1 tsp

Instructions

1️⃣ Preheat the Oven:
Preheat your oven to 400°F (200°C) so it’s ready for baking.

2️⃣ Prepare the Meat Mixture:

In a large mixing bowl, combine ground chicken, egg, plain bread crumbs, minced onion, garlic powder, parsley, salt, and black pepper.

Add mayonnaise to keep the meatloaf moist.

Mix thoroughly until all ingredients are well incorporated.

3️⃣ Assemble the Meatloaf:

Grease a loaf pan or line it with parchment paper.

Spread half of the chicken mixture evenly in the bottom of the pan.

Layer with 3 slices of ham, followed by 3 slices of Swiss cheese.

Add the remaining chicken mixture on top, pressing gently to seal the edges.

Repeat with another layer of ham and Swiss cheese on top.

4️⃣ Bake the Meatloaf:

Bake in the preheated oven for 25 minutes.

Remove the meatloaf and sprinkle the panko breadcrumbs evenly on top.

Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 165°F (74°C).

5️⃣ Prepare the Creamy Dijon Gravy:

While the meatloaf bakes, melt butter in a medium saucepan over medium heat.

Whisk in flour and cook for 1-2 minutes to form a roux.

Gradually whisk in heavy cream and milk, ensuring no lumps form.

Stir in Worcestershire sauce and Dijon mustard.

Bring the mixture to a simmer, cooking until thickened (about 5 minutes).

Remove from heat and stir in Parmesan cheese, nutmeg, salt, and pepper.

6️⃣ Serve:

Allow the meatloaf to rest for a few minutes before slicing.

Serve each slice topped with a generous drizzle of creamy Dijon gravy.
