For the chicken:

  • 4 boneless, skinless chicken breasts, pounded to even thickness
  • Salt and pepper to taste
  • 2 tablespoons olive oil

For the sauce:

  • 1 tablespoon unsalted butter
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 cup chicken broth
  • 1 cup heavy cream

For the noodles:

  • 12 ounces noodles, cooked and tossed with butter
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for garnish)

Instructions

1️⃣ Season and cook the chicken:

Season the chicken breasts with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

2️⃣ Sauté the mushrooms:

In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and cook for about 5 minutes until they begin to brown and release their juices.

3️⃣ Add garlic and herbs:

Stir in the minced garlic, thyme, and oregano. Cook for an additional 1-2 minutes until the garlic is fragrant.

4️⃣ Deglaze the skillet:

Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and reduce the liquid by half, about 5 minutes.

5️⃣ Create the creamy sauce:

Stir in the heavy cream and bring the mixture back to a simmer. Cook for 3-4 minutes until the sauce thickens slightly.

6️⃣ Combine and serve:

Return the chicken to the skillet, spooning the sauce over the top, and warm through.

Serve the chicken over buttered noodles, garnished with fresh parsley and a generous sprinkle of grated Parmesan cheese.

  • For extra flavor, marinate the chicken briefly with olive oil, garlic, and herbs before cooking.
