Ingredients
For the Bread:
- 2 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt

- 1 ¼ cups whole eggnog
- 1 cup granulated sugar
- ½ cup vegetable oil
- 2 teaspoons pure vanilla extract
- 1 teaspoon rum extract
- 2 large eggs
For the Glaze:
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon rum extract
- 1/8 teaspoon ground nutmeg
- 2–4 tablespoons eggnog (adjust to drizzle consistency)
Instructions
1️⃣ Prepare the bread: Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or spray with baking spray. Set aside.
2️⃣ Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
3️⃣ Mix wet ingredients: In a separate large bowl, whisk together the eggnog, sugar, vegetable oil, vanilla extract, rum extract, and eggs until smooth and fully combined.
4️⃣ Combine wet and dry ingredients: Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix the batter.
5️⃣ Bake the bread: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
6️⃣ Cool the bread: Allow the bread to cool in the pan for 20 minutes before transferring it to a cooling rack to cool completely.
7️⃣ Make the glaze: In a small bowl, whisk together the powdered sugar, vanilla extract, rum extract, nutmeg, and 2–4 tablespoons of eggnog. Add the eggnog gradually until the glaze reaches a drizzle consistency.
8️⃣ Glaze the bread: Once the bread is slightly warm (but not hot), drizzle the glaze over the top, letting it soak in. Continue drizzling until the glaze is fully used up.
Notes
- For extra holiday flair, garnish the glazed bread with a sprinkle of additional nutmeg or a few festive sprinkles.
- If you don’t have rum extract, you can substitute with more vanilla extract for a non-alcoholic version.
- This bread can be made a day in advance—simply store it in an airtight container at room temperature. The flavor often improves after a day.
