For the Filling
6 to 8 fresh peaches, peeled and sliced, or 4 cups canned peaches, drained
three fourths cup granulated sugar
one fourth cup light brown sugar
one half teaspoon cinnamon
one fourth teaspoon nutmeg (optional)
two teaspoons lemon juice
one tablespoon cornstarch

For the Topping
one cup all-purpose flour
one cup granulated sugar
one teaspoon baking powder
one fourth teaspoon salt
one half cup unsalted butter, melted
three fourths cup whole milk
one teaspoon vanilla extract

Optional
Vanilla ice cream or whipped cream for serving


Instructions

Preheat your oven to 375 degrees Fahrenheit or 190 degrees Celsius. Grease a 9 by 13 inch baking dish with butter or non-stick spray.

In a large mixing bowl, combine the peaches, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well until the peaches are evenly coated. Pour the peach mixture into the prepared baking dish, spreading it out evenly.

In another bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the melted butter, milk, and vanilla extract until the batter is smooth and well combined.

Pour the batter evenly over the peach filling in the baking dish. Use a spatula to spread the batter gently, ensuring it covers the peaches. If desired, sprinkle a little extra cinnamon or sugar on top for additional flavor.

Place the baking dish in the preheated oven and bake for 40 to 45 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.

Remove the cobbler from the oven and let it cool for about 10 minutes to allow the filling to set slightly. Serve warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

If using canned peaches, make sure to drain them well to avoid excess liquid in the filling. Fresh peaches provide the best flavor and texture, but both options work beautifully. For a slightly spiced variation, feel free to add a pinch more cinnamon or nutmeg. The cobbler is best enjoyed warm, but leftovers can be stored covered in the refrigerator and reheated as needed.
