  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided

Instructions

1️⃣ Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray and set aside.

2️⃣ Prepare the Chicken: Slice each chicken breast horizontally to create four cutlets. Pound them to even thickness using a rolling pin or meat mallet.

3️⃣ Marinate the Chicken: In a large bowl, mix 1 tablespoon of olive oil, minced garlic, Italian seasoning, salt, and pepper. Add the chicken cutlets, toss to coat, cover, and refrigerate for 15-30 minutes to marinate.

4️⃣ Wilt the Spinach: In a skillet, heat the remaining 1 tablespoon olive oil over medium heat. Add the spinach and cook, stirring frequently, until just wilted (about 2-3 minutes). Set aside to cool slightly.

5️⃣ Prepare the Creamy Spinach Mixture: In a medium bowl, beat the softened cream cheese until smooth. Stir in the wilted spinach, ½ cup mozzarella cheese, and Parmesan cheese (if using).

6️⃣ Sear the Chicken (Optional): Remove the chicken from the marinade, letting any excess drip off. For extra flavor, sear the chicken in the skillet for 1-2 minutes per side until lightly browned.

7️⃣ Assemble the Casserole: Arrange the chicken in a single layer in the prepared baking dish. Spread the spinach and cream cheese mixture evenly over the chicken, then sprinkle with the remaining ½ cup of mozzarella cheese.
