  • 1 can (10.75 oz) cream of chicken or cream of mushroom soup
  • 1 cup sour cream or plain Greek yogurt
  • 2 sleeves Ritz crackers, crushed
  • 1 stick (½ cup) butter, melted
  • 2 tablespoons poppy seeds (optional)

Instructions

1️⃣ Preheat Oven: Set oven to 350°F (175°C). Lightly grease a 2.5 – 3-quart baking dish with non-stick spray.

2️⃣ Mix the Filling: In a large bowl, stir together the cream of chicken soup and sour cream (or Greek yogurt) until well blended. Fold in the shredded chicken.

3️⃣ Assemble the Casserole: Spread the chicken mixture evenly in the prepared baking dish.

4️⃣ Prepare the Topping: In a separate bowl, combine the crushed Ritz crackers with the poppy seeds (if using). Sprinkle the cracker mixture evenly over the chicken.

5️⃣ Add Butter: Drizzle the melted butter evenly over the cracker topping.

6️⃣ Bake: Place in the oven and bake for 25-30 minutes, or until the crumbs are golden brown and the casserole is hot and bubbly in the center.
