Description
Creamy Ranch Chicken made in the slow cooker is a rich, comforting dish that’s full of flavor and incredibly easy to prepare. Tender chicken breasts simmer in a creamy ranch-infused sauce that’s perfect served over mashed potatoes, rice, or pasta. With only a few ingredients and minimal prep, this recipe is ideal for busy weekdays or when you want a satisfying meal with almost no effort.
Ingredients
4 boneless, skinless chicken breasts
1 packet ranch seasoning mix
1 can (10.5 oz) cream of chicken soup
8 oz cream cheese, softened
½ cup chicken broth
Salt and black pepper to taste
Fresh chopped parsley for garnish (optional)
Instructions
Place the chicken breasts in the bottom of your slow cooker.
In a mixing bowl, combine the cream of chicken soup, ranch seasoning, cream cheese, and chicken broth. Mix until smooth and well blended.
Pour the mixture over the chicken, spreading it out to cover the meat evenly.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and easily shredded.
Once cooked, shred the chicken directly in the slow cooker using two forks, then stir it into the sauce to coat evenly.
Let it cook uncovered for an additional 15 to 20 minutes to allow the sauce to thicken slightly.
Taste and season with additional salt and pepper if needed. Garnish with chopped parsley before serving if desired.
Notes
You can substitute cream of mushroom or cream of celery soup for a different twist. For extra flavor, add cooked and crumbled bacon or sautéed mushrooms near the end of the cooking time. This dish stores well in the refrigerator for up to three days and can also be frozen. Reheat gently on the stovetop or in the microwave, adding a splash of milk or broth to loosen the sauce if needed. Serve over egg noodles, mashed potatoes, or rice for a complete and filling meal.
