  • 1 lb Italian sausage
  • 8 oz pasta (any type, such as penne, rigatoni, or fettuccine)
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup spinach, roughly chopped
  • ½ cup sun-dried tomatoes, chopped
  • ¼ cup grated Parmesan cheese

Instructions

1️⃣ Cook the pasta:
In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

2️⃣ Brown the sausage:
In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into crumbles as it cooks, about 5-7 minutes.

3️⃣ Sauté aromatics:
Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes, stirring, until the onion is softened and fragrant.

4️⃣ Make the creamy sauce:
Stir in the heavy cream, chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a gentle simmer.

5️⃣ Add spinach and sun-dried tomatoes:
Stir the chopped spinach and sun-dried tomatoes into the sauce. Simmer for about 2 minutes, or until the spinach is wilted and the sauce is well combined.

6️⃣ Combine pasta and sauce:
Add the cooked pasta to the skillet, tossing to coat evenly in the creamy sausage sauce.

7️⃣ Serve and garnish:
Sprinkle the dish with grated Parmesan cheese. Serve hot, garnished with additional Parmesan and fresh parsley if desired.

Notes

  • For extra heat, add a pinch of red pepper flakes when cooking the sausage.
  • Substitute kale or arugula for spinach if preferred.
