- 1 can (10 oz.) cream of mushroom soup
- ½ onion, diced
- 2 teaspoons minced garlic
- 2 teaspoons Italian seasoning
- 4 oz. cream cheese, diced
- 2 cups shredded cheddar cheese
- 1 package (16 oz.) spaghetti
Instructions
Prepare the Ingredients
Add the chicken breasts, diced tomatoes with green chiles, cream of chicken soup, cream of mushroom soup, onion, garlic, and Italian seasoning to the crockpot.
Cook the Chicken
Cover and cook on high for 3-4 hours or low for 6-8 hours until the chicken is tender and fully cooked.
Shred the Chicken
Remove the chicken from the crockpot, shred it using two forks, and return it to the crockpot.
Add the Cheese
Stir in the diced cream cheese and shredded cheddar cheese. Cover and cook on low for 20-30 minutes until the cheese is fully melted and combined into a creamy sauce.
Cook the Spaghetti
While the cheese is melting, cook the spaghetti according to the package directions until al dente. Drain and set aside.
Combine and Serve
Stir the cooked spaghetti into the crockpot mixture, ensuring the noodles are evenly coated with the cheesy sauce.
Serve immediately and enjoy!
Notes
- For a spicier version, use hot diced tomatoes with green chiles or add a pinch of cayenne pepper.
- You can substitute rotisserie chicken for a quicker version—just add it in during the last 30 minutes.
- If the sauce is too thick, stir in a little chicken broth or milk to loosen it.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stovetop or microwave with a splash of milk to maintain creaminess.
