  • Author: David

Description

This Garlic Parmesan Chicken and Potatoes recipe is the perfect balance of crispy, seasoned potatoes and juicy chicken, all coated in a rich, savory garlic parmesan sauce. It’s a comforting, satisfying meal that’s quick and easy to make, especially when you use an air fryer for the potatoes and a skillet for the chicken. The addition of mozzarella cheese creates a gooey, delicious topping that takes this dish to the next level.

Ingredients

Scale

2 chicken breasts
45 small/medium-sized potatoes
Olive oil
Salt, pepper, garlic powder, paprika (for potatoes)
2 tablespoons butter
1/2 teaspoon each of salt and pepper
1 teaspoon each of paprika, onion powder, and Italian seasoning
2 tablespoons minced garlic
Buffalo Wild Wings Garlic Parmesan Sauce
1 cup shredded mozzarella cheese

Instructions

Start by washing and peeling the potatoes, then cut them into small cubes. Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika, ensuring they’re well-coated.

Cook the seasoned potatoes in an air fryer at 400°F for about 20 minutes, shaking the basket a couple of times during cooking to ensure even crisping.

While the potatoes are cooking, cut the chicken breasts into small cubes. Season the chicken with 1/2 teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.

Melt the butter in a skillet over medium-high heat. Add the seasoned chicken to the skillet and cook until it reaches an internal temperature of 165°F and is cooked through.

Once the chicken is done, add the minced garlic and Buffalo Wild Wings Garlic Parmesan Sauce to the skillet. Stir to coat the chicken evenly with the sauce, letting it simmer for a minute or two.

Once the potatoes are done, add them to the skillet with the chicken and toss everything together so the potatoes are coated with the garlic parmesan sauce.

Sprinkle the shredded mozzarella cheese on top of the chicken and potatoes. You can either place a lid on the skillet to melt the cheese or transfer the skillet to the oven to broil for a couple of minutes until the cheese is melted and bubbly.

Notes

This Garlic Parmesan Chicken and Potatoes dish is a full meal in one pan. The crispy potatoes pair perfectly with the tender, flavorful chicken, and the creamy garlic parmesan sauce ties everything together for a rich and savory experience. The melted mozzarella cheese adds a gooey, indulgent finish that makes every bite irresistible.
