This hearty dish combines tender, garlicky chicken bites with a rich Parmesan cream sauce and crispy cheesy roasted potatoes. Perfect for dinner when comfort food is on the menu!
Ingredients
For the Garlic Butter Chicken Bites:
- 2 lbs chicken breast or thighs, cut into bite-sized pieces
- 4 cloves garlic, minced
- ¼ cup butter
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
For the Parmesan Cream Sauce:
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
For the Cheesy Roasted Potatoes:
- 4 medium potatoes, cubed
- 2 tbsp olive oil
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 tbsp garlic powder
- 1 tbsp parsley
- Salt and pepper, to taste
Instructions
1️⃣ Prepare the Chicken
Heat butter and olive oil in a large skillet over medium heat.
Season the chicken pieces with salt and pepper. Add them to the skillet with minced garlic.
Cook for 7-10 minutes, stirring occasionally, until golden brown and fully cooked.
Remove from the skillet, set aside, and keep warm.
2️⃣ Make the Parmesan Cream Sauce
In the same skillet, add the heavy cream, Parmesan cheese, garlic powder, onion powder, and Italian seasoning.
Stir and bring the sauce to a gentle simmer. Cook for about 5 minutes, or until thickened.
Taste and adjust seasoning with salt and pepper.
3️⃣ Prepare the Cheesy Roasted Potatoes
Preheat the oven to 400°F (200°C).
In a bowl, toss the cubed potatoes with olive oil, garlic powder, parsley, salt, and pepper.
Spread the potatoes evenly on a baking sheet. Roast for 25-30 minutes, or until golden and crispy, flipping halfway through.
Sprinkle shredded cheddar and grated Parmesan cheese over the roasted potatoes. Return them to the oven for an additional 5 minutes, or until the cheese melts.
4️⃣ Assemble the Dish
Pour the Parmesan cream sauce over the chicken bites, ensuring they are evenly coated. Garnish with fresh parsley.
Serve the creamy chicken bites alongside the cheesy roasted potatoes for a perfect pairing.
