Ingredients
- 2 chicken breasts, cubed
- 4–5 small/medium-sized potatoes, peeled and cubed
- Olive oil
- Salt, pepper, garlic powder, and paprika (for potatoes)
- 2 tablespoons butter
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 tablespoons minced garlic
- 2–3 tablespoons Buffalo Wild Wings Garlic Parmesan Sauce (or more to taste)
- 1 cup shredded mozzarella cheese
Instructions
1️⃣ Prepare the potatoes: Wash, peel, and cut the potatoes into small cubes. In a large bowl, toss the potatoes with a drizzle of olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
2️⃣ Cook the potatoes: Place the seasoned potatoes in an air fryer and cook at 400°F for about 20 minutes, shaking the basket a couple of times during cooking to ensure they cook evenly and become crispy.
3️⃣ Season the chicken: While the potatoes are cooking, cut the chicken breasts into small cubes. In a separate bowl, season the chicken pieces with ½ teaspoon each of salt and pepper, 1 teaspoon each of paprika, onion powder, and Italian seasoning. Toss to coat evenly.
4️⃣ Cook the chicken: Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the seasoned chicken and cook, stirring occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F).
5️⃣ Add garlic and sauce: Add the minced garlic to the skillet with the cooked chicken, stirring for about 1 minute until fragrant. Pour in the Buffalo Wild Wings Garlic Parmesan Sauce, stirring to coat the chicken pieces evenly.
6️⃣ Combine with potatoes: Once the potatoes are finished, add them to the skillet with the chicken and toss everything together until the potatoes are well coated in the sauce.
7️⃣ Add cheese and melt: Sprinkle the shredded mozzarella cheese over the top. Cover the skillet with a lid and let it sit on low heat until the cheese melts, or broil in the oven for a few minutes until the cheese is bubbly and melted.
