  • Author: David
  • Total Time: 30 minutes

Description

This rich and creamy rigatoni dish features savory garlic sausage and a luscious Alfredo sauce. Quick to prepare, it’s perfect for an indulgent weeknight dinner or a cozy weekend meal.

Ingredients

Scale
  • 1 lb rigatoni pasta
  • 1 lb garlic sausage, casings removed and crumbled
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

1️⃣ Cook the rigatoni: Bring a large pot of salted water to a boil. Cook the rigatoni according to the package instructions until al dente. Drain and set aside.

2️⃣ Brown the sausage: Heat olive oil in a large skillet over medium heat. Add the crumbled garlic sausage and cook, stirring occasionally, until browned and fully cooked, about 5-7 minutes.

3️⃣ Add garlic: Stir in the minced garlic and cook for an additional minute, being careful not to let it burn.

4️⃣ Make the Alfredo sauce: Pour the heavy cream into the skillet and bring it to a gentle simmer. Cook for 2-3 minutes, stirring occasionally, until the cream begins to thicken slightly.

5️⃣ Incorporate the Parmesan: Gradually stir in the grated Parmesan cheese, allowing it to melt and combine with the cream to create a smooth sauce.

6️⃣ Season: Taste the sauce and season with salt and pepper as needed.

7️⃣ Combine with pasta: Add the cooked rigatoni to the skillet and toss until the pasta is thoroughly coated in the creamy Alfredo sauce.

8️⃣ Serve and garnish: Plate the pasta immediately and garnish with freshly chopped parsley. Enjoy hot!

Notes

  • For a spicier version, use a garlic sausage with added chili or sprinkle in red pepper flakes.
  • Substitute rigatoni with penne or fettuccine for a variation.
  • A splash of white wine can be added to the sauce for extra depth of flavor.
