Ingredients

  • 4 (6-ounce) cod fillets
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter
  • 1 garlic clove, minced
  • Juice of 1/2 lemon
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, snipped

Instructions

1️⃣ Season the cod:
Pat the cod fillets dry with paper towels to remove excess moisture. Season both sides of the fillets with salt and freshly ground black pepper.

2️⃣ Sear the cod:
Heat the olive oil in a large skillet over medium-high heat until it shimmers but isn’t smoking. Carefully place the cod fillets in the skillet and sear for about 4 minutes on one side, until the underside is golden and crisp.

3️⃣ Flip and finish cooking:
Gently flip the fillets using a spatula and cook for another 3 minutes, or until the fish flakes easily with a fork. The cod should be cooked through but still moist inside.

4️⃣ Keep the fish warm:
Remove the cooked cod from the skillet and place on a plate. Tent the plate with foil to keep the fillets warm while you make the sauce.

5️⃣ Make the herb butter sauce:
In the same skillet, lower the heat to medium. Add the butter and minced garlic, cooking until the butter is melted and the garlic is fragrant, about 1 minute.

6️⃣ Add the herbs and lemon:
Remove the skillet from heat and stir in the lemon juice, fresh parsley, dill, and chives. Mix well to combine all the flavors.

7️⃣ Serve the cod:
Spoon the warm herb butter sauce over the cod fillets. Serve immediately, garnished with extra herbs or lemon wedges if desired.

  • Fish substitute: This recipe also works beautifully with other white fish like haddock or halibut.
