2 tablespoons butter
1 small onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 can (10 ounces) diced tomatoes with green chiles, drained
1 can (10.5 ounces) cream of chicken soup
1 cup sour cream
2 cups shredded cooked chicken
1½ cups shredded cheddar cheese
1 teaspoon Cajun seasoning
½ teaspoon smoked paprika
½ teaspoon black pepper
¼ teaspoon cayenne pepper
Salt to taste
½ cup grated Parmesan cheese
Chopped parsley for garnish (optional)


Instructions

Preheat the oven to 350°F. Cook the spaghetti in salted water until just al dente, drain, and set aside.

In a large skillet, melt butter over medium heat. Add diced onion and bell pepper, cooking for 4 to 5 minutes until softened. Stir in garlic and cook for another minute until fragrant.

Add the diced tomatoes with green chiles, cream of chicken soup, sour cream, shredded chicken, Cajun seasoning, paprika, black pepper, cayenne, and a pinch of salt. Stir until everything is well combined and heated through.

Add the cooked spaghetti to the sauce and gently toss to coat. Fold in the shredded cheddar cheese, mixing until melted and creamy.

Notes
