Loaded Potato Meatloaf Casserole

This casserole combines the hearty goodness of a classic meatloaf with the rich, comforting flavors of loaded mashed potatoes. Topped with cheddar cheese and bacon bits, it’s an easy one-dish meal perfect for family dinners.


Ingredients

  • 1 lb ground beef, extra lean
  • 1/2 cup onion, diced
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 cup seasoned Italian bread crumbs
  • 1 egg
  • 1 1/2 cups water
  • 1/2 cup milk
  • 1 (4 oz) package garlic-flavored instant mashed potatoes
  • 1 1/2 cups shredded cheddar cheese blend
  • 1/4 cup real bacon bits

Instructions

1️⃣ Preheat the oven to 400°F (200°C).

2️⃣ Prepare the mashed potatoes: In a medium saucepan, bring 1 1/2 cups water and 1/2 cup milk to a boil. Remove from heat and stir in the garlic-flavored instant mashed potato powder until smooth. Set aside.

3️⃣ Mix the meatloaf base: In a large mixing bowl, combine the ground beef, diced onions, brown sugar, and Worcestershire sauce. Mix well using your hands.

4️⃣ Add the binding ingredients: Add the seasoned bread crumbs and egg to the meat mixture, continuing to mix with your hands until fully incorporated.

5️⃣ Form the meatloaf: Press the meat mixture evenly into the bottom of an 8-inch square baking dish, creating an even layer.

6️⃣ Layer the mashed potatoes: Using a rubber spatula, spread the prepared mashed potatoes evenly over the top of the meat mixture.

7️⃣ Top with cheese and bacon: Sprinkle the shredded cheddar cheese over the mashed potatoes, then sprinkle the real bacon bits on top.

8️⃣ Bake covered: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

9️⃣ Finish baking uncovered: Remove the foil and continue baking for an additional 10 minutes, until the cheese is melted and bubbly.

🔟 Cool and serve: Remove from the oven and let the casserole cool for a few minutes before slicing and serving.

Notes

  • Make-ahead tip: You can assemble the casserole ahead of time, cover it, and refrigerate it until you’re ready to bake. Just add a few extra minutes to the baking time if starting from cold.
  • Vegetable option: If you want to add some veggies, you can mix in peas or carrots with the meat mixture for added texture and flavor.
  • Cheese options: Feel free to use other cheese blends like Monterey Jack or Colby for a different flavor profile.
