One-Pan Creamy Parmesan Chicken & Rice

Description

This one-pan wonder combines tender chicken, perfectly cooked rice, and a rich, creamy Parmesan sauce. It’s a comforting meal that’s easy to make and perfect for weeknight dinners!


Ingredients

  • 1.5 lbs chicken breasts, cut into 1-inch cubes
  • 4 tbsp unsalted butter
  • 1 large onion, finely diced
  • 3 cloves garlic, minced (approximately 3 tsp)
  • 2 tsp Italian seasoning
  • ½ tsp ground black pepper
  • 1 tsp salt
  • 2½ cups chicken broth
  • 1 cup long-grain white rice
  • ½ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Optional: Chopped parsley, for garnish

Instructions

1️⃣ Prepare the Skillet
Heat a large skillet over medium-high heat. Add the butter and allow it to melt completely.

2️⃣ Sauté the Onions
Add the finely diced onion to the skillet. Sauté for 2-3 minutes, or until softened and translucent.

3️⃣ Cook the Chicken
Add the cubed chicken to the skillet along with the Italian seasoning, black pepper, and salt. Cook for about 5 minutes, stirring frequently, until the chicken is golden on all sides.

4️⃣ Add the Garlic
Stir in the minced garlic and cook for 1 minute, stirring constantly to prevent burning.

5️⃣ Combine the Broth and Rice
Pour the chicken broth and rice into the skillet. Stir to distribute the ingredients evenly.

6️⃣ Simmer the Dish
Bring the mixture to a boil. Reduce the heat to medium-low, cover the skillet with a lid, and let it simmer for 17-20 minutes. The rice should be tender, and most of the liquid will be absorbed.

7️⃣ Finish with Cream and Cheese
Remove the lid and stir in the heavy cream and grated Parmesan cheese. Mix until the sauce is creamy and the cheese is fully melted.

8️⃣ Serve and Garnish
Serve immediately, garnished with chopped parsley for added color and a fresh flavor contrast, if desired.

Notes

  • Rice Texture: If the rice is still firm after simmering, add an additional ¼ cup of chicken broth and cook for 3-5 more minutes.
  • Cheese Variations: Swap Parmesan for Pecorino Romano or Gruyère for a different flavor profile.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stove with a splash of broth or cream to revive the texture.
