Ingredients
For the Chicken:
2–3 boneless, skinless chicken breasts, diced into bite-sized pieces
1 tsp Italian seasoning
1/2 tsp garlic powder
Salt and pepper, to taste
For the Pasta:
1 medium yellow onion, minced
3 cloves garlic, minced
16 oz dried short-cut pasta (e.g., rigatoni or penne)
24 oz jar of marinara sauce (e.g., Newman’s Own)
Water (to fill the empty marinara sauce jar)
For the Cheese:
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
Optional Garnishes:
Additional dried Italian seasoning
Fresh parsley and/or basil, minced
Instructions
1️⃣ Cook the Chicken:
In a large pot or deep skillet, heat a drizzle of olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, Italian seasoning, and garlic powder. Sauté for about 5 minutes, until the chicken is mostly cooked through. Remove the chicken from the pot and set aside. 🍳
