Description
The Pineapple Coconut God Bless America Cake is a delightful combination of tropical flavors and patriotic charm, perfect for celebrating American holidays such as the 4th of July, Memorial Day, or Veterans Day. The cake boasts a moist and tender crumb, thanks to the fresh (or canned) pineapple and shredded coconut, which provide a sweet, fruity, and slightly nutty contrast to the rich, buttery base. The cake is often decorated in patriotic red, white, and blue colors, making it a show-stopping centerpiece at any festive gathering. Whether you’re hosting a family BBQ or joining a community celebration, this cake will bring both flavor and a sense of pride to the table.
Ingredients
For the Cake:
- 1 can (20 oz) crushed pineapple (with juice)
- 2 large eggs
- ¼ cup oil
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- ½ teaspoon salt
For the Icing:
- 1 can (12 oz) evaporated milk
- 1 cup unsalted butter
- 1½ cups granulated sugar
- 2 cups shredded coconut
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
1️⃣ Preheat the oven:
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2️⃣ Prepare the cake batter:
In a large bowl, mix together the crushed pineapple (with juice), eggs, oil, granulated sugar, and brown sugar until well combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
3️⃣ Bake the cake:
Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
4️⃣ Make the icing:
While the cake is baking, prepare the icing. In a medium saucepan, combine the evaporated milk, butter, and sugar. Bring to a boil over medium heat, then reduce the heat and simmer for 10 minutes, stirring occasionally. Remove from heat and stir in the shredded coconut, chopped pecans, vanilla extract, and salt.
5️⃣ Ice the cake:
Once the cake is out of the oven and still hot, pour the warm coconut-pecan icing over the top, spreading it evenly. Let the cake cool completely to allow the icing to set.
6️⃣ Serve and enjoy:
Once cooled, slice and serve your delicious pineapple cake!
