  • 2 teaspoons baking powder
  • ½ cup unsalted butter (softened)

  • 1 cup crushed pineapple (drained, liquid reserved)
  • ¼ cup pineapple juice (from the canned crushed pineapple)
  • 2 tablespoons milk

For the glaze:

  • 2 tablespoons pineapple juice (from the canned crushed pineapple)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

1️⃣ Preheat the oven:
Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside. 🔥

2️⃣ Prepare the dry ingredients:
In a medium-sized bowl, sift together the flour, salt, and baking powder. 🥣

3️⃣ Cream butter and sugar:
In a separate bowl, cream the softened butter and granulated sugar until smooth and fluffy. 🍶

4️⃣ Add the eggs:
Add the eggs one at a time, beating well after each addition. 🥚🥚

5️⃣ Mix in the pineapple juice and dry ingredients:
Gradually add the ¼ cup reserved pineapple juice and the sifted dry ingredients to the butter mixture, alternating between the two. Mix until everything is well combined. 🍍

6️⃣ Incorporate milk and crushed pineapple:
Stir in the milk until well blended. Then gently fold in the drained crushed pineapple. 🥛🍍

7️⃣ Bake:
Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-55 minutes or until a skewer inserted into the center comes out clean. ⏳
