This Quick Broccoli Pasta is a creamy, cheesy pasta dish with tender broccoli florets and a delicious homemade sauce. It’s a simple, one-pan meal that’s perfect for busy weeknights but still packed with flavor and comfort.
Ingredients
- 8 ounces medium pasta (such as penne or rotini, about 3 cups dry)
- 4 cups broccoli, chopped
- 1 cup chicken broth (not low sodium)
- 1 cup light cream
- 2 tablespoons + 1 teaspoon cornstarch
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic salt
- 1 cup sharp cheddar cheese, shredded
- 1/4 cup Parmesan cheese, shredded
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon pepper (or to taste)
Instructions
1️⃣ Prepare Pasta and Broccoli: Bring a large saucepan of salted water to a boil. Add pasta and cook until al dente according to package directions. Add the chopped broccoli to the boiling water for the last 4 minutes of pasta cooking time. Drain well (do not rinse the pasta) and set aside.
2️⃣ Make the Sauce: In the same saucepan, combine chicken broth, light cream, cornstarch, onion powder, and garlic salt. Whisk until smooth. Place over medium heat, bringing the mixture to a simmer while stirring constantly until it thickens.
3️⃣ Add Cheese and Combine: Once the sauce has thickened, remove the saucepan from heat. Stir in shredded cheddar and Parmesan cheeses until melted and smooth. Toss in the drained pasta and broccoli, coating them evenly with the sauce.
4️⃣ Season and Serve: Season with salt and pepper to taste. Serve immediately and enjoy your quick and creamy broccoli pasta!
Notes
- For Extra Flavor: Add a pinch of red pepper flakes or a dash of nutmeg to the sauce.
- Pasta Options: Substitute penne or rotini with your favorite pasta shape, like fusilli or bow-tie.
