  • 1 sheet puff pastry, thawed
  • 1 (8 oz) package cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam or preserves
  • Fresh raspberries (optional, for garnish)
  • Powdered sugar (optional, for dusting)

Instructions

1️⃣ Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

2️⃣ Prepare the puff pastry: Roll out the thawed puff pastry on a lightly floured surface to smooth any creases. Cut the sheet into 12 equal squares and arrange them on the prepared baking sheet.

3️⃣ Make the cream cheese filling: In a medium bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

4️⃣ Fill the pastry squares: Place about 1 teaspoon of the cream cheese mixture in the center of each puff pastry square. Add a small dollop (about 1/2 teaspoon) of raspberry jam on top of the cream cheese.

5️⃣ Fold the pastry: Gently fold the corners of each square toward the center, pressing them down lightly to seal the pastry.

6️⃣ Bake: Bake the pastries in the preheated oven for 15-18 minutes, or until they are puffed and golden brown.

7️⃣ Cool and garnish: Let the pastries cool on a wire rack. If desired, garnish with fresh raspberries and dust with powdered sugar before serving.

Notes

  • These bites are best enjoyed fresh out of the oven but can be stored in an airtight container for up to two days.
  • You can experiment with different jams or preserves, such as strawberry or apricot, for variety.
  • If you want an extra fancy touch, drizzle a little melted white chocolate over the top before serving.
