Ingredients
- For the chicken filling:
- 1–2 lbs boneless, skinless chicken breasts
- 16 ounces cream cheese, cubed
- 2 tablespoons ranch seasoning mix (or 1 packet)
- 2 cups cheddar cheese, shredded
- 12 slices turkey bacon, cooked and chopped
- 4 scallions, chopped
- For serving:
- Soft buns or sandwich rolls
Instructions
1️⃣ Prepare the slow cooker: Place the chicken breasts in the basin of a 6-quart slow cooker.
2️⃣ Season and layer: Sprinkle the ranch seasoning evenly over the chicken. Add the cubed cream cheese on top.
3️⃣ Cook: Cover and cook on LOW for 6 hours or HIGH for 4 hours, until the chicken is tender and fully cooked.
4️⃣ Shred and mix: Once cooked, stir to combine the cream cheese sauce with the chicken. Use two forks to shred the chicken into bite-sized pieces.
5️⃣ Add the mix-ins: Stir in the chopped turkey bacon, scallions, and 1 ½ cups of shredded cheddar cheese.
6️⃣ Melt the cheese: Sprinkle the remaining ½ cup of cheddar cheese over the top. Cover the slow cooker and allow the cheese to melt for about 10 minutes.
7️⃣ Assemble and serve: Scoop the creamy chicken mixture onto buns or sandwich rolls. Serve warm and enjoy!
