Walking Taco Casserole brings the fun and flavor of the popular fairground snack into a hearty, family-style dish. With layers of savory beef, gooey cheese, and crunchy corn chips, this one-pan meal is simple to make and packed with bold Tex-Mex flavors. Ingredients
1 ½ lbs ground beef
1 cup onion, chopped
3 oz cream cheese
1 packet taco seasoning
1 can green chilis
2–3 cups Fritos corn chips
1 cup shredded taco blend cheese
1 Roma tomato, chopped
1–2 cups shredded lettuce
Salsa and sour cream for garnish
Instructions
1️⃣ Preheat the oven to 350°F and set out an oven-safe skillet or a casserole dish.
2️⃣ In the skillet, cook the ground beef and chopped onion over medium-high heat until the beef is fully browned and the onions are soft, about 7–10 minutes. Drain any excess grease if needed.
3️⃣ Add the taco seasoning, green chilis, and cream cheese to the skillet. Stir until the cream cheese is melted and the mixture is evenly combined and creamy.
4️⃣ Remove the skillet from the heat. Sprinkle the Fritos corn chips over the beef mixture in an even layer.
5️⃣ Top with the shredded taco blend cheese, spreading it evenly across the chips.
6️⃣ Transfer the skillet to the oven and bake for 20 minutes, or until the cheese is melted and bubbly.
7️⃣ After baking, let the casserole cool for a few minutes. Then top with chopped Roma tomato and shredded lettuce.
8️⃣ Serve hot, garnished with salsa and sour cream according to preference.
Notes
You can swap Fritos for crushed Doritos or tortilla chips for a different flavor twist. Add jalapeños or black olives for extra heat or texture. For a vegetarian version, use black beans or meatless crumbles instead of ground beef. This dish is best enjoyed fresh to maintain the crunch of the chips, but leftovers can be reheated and topped fresh again.
